Agave syrup is a natural sweetener I discovered not so long ago, at an organic store. It is
derived from the extraction of agaves, the fruit of a cactus’ variety from southern Mexico.

The agave nectar, used for a long time in
Mexico and already known by the Aztecs, is also
called "honey water" or "aguamiel" because it is
more liquid than honey.
Agave syrup is a
great ingredient because of a very low glycemic index and is
very useful for people who want to limit their sugar intake.
With its smooth consistency, it fits easily in juices
and fruit cocktails, and only a teaspoon per glass is needed.
You can also try it in hot drink, like coffee or tea, if it’s difficult for you to drink without sugar.
Otherwise, if you like to cook for your family or friend, I have good news! Now, you can share a piece of cake without any anxiety for your glucose level because you can use agave syrup in all pastries: cakes, pies, icing or even chocolate mousse.
